Teriyaki Chicken Don

(Ingredients for two servings)
A chicken fillet from Kagoshima Pref. cut into bite-sized pieces, two eggs, a suitable amount of cooked rice, a tablespoon of sugar, 3 tablespoons of soy sauce, 1.5 tablespoons of mirin (sweet cooking rice wine) and 1 tablespoon of oil. -
First, cook the scrambled egg as the topping for the cooked rice.
Crack the eggs into a bowl and beat.
Pour a little oil in a preheated frying pan. Pour the beaten egg into it and cook the egg, stirring gently.
Transfer the cooked scrambled egg to a plate. -
Make teriyaki chicken using the same frying pan. Fry the chicken pieces with the skin sides down. Once they brown, turn them over.
When both sides of the pieces brown, sprinkle sugar into the frying pan and pour the mixture of soy sauce and mirin into it to cook it down. -
Put the cooked rice in a bowl and place the chicken pieces and the scrambled egg on top of the rice in that order.

The chicken is delicious as the juiciness and nice flavor spread each time you bite!The sweet and salty seasoning is excellent for chicken!

In addition to teriyaki-don, you can enjoy the chicken by being plainly simmered with egg in sweet soy sauce to which vinegar is added or by being skewered and grilled with avocado after being seasoned with salt.
